We may believe that the concept of barbecued meat and developing BBQ sauce recipes are modern. But, then, everyone is wrong at least once. Believe it or not, the history of barbecue and BBQ sauce goes back a long way. It’s a human tradition that has been around for hundreds of thousands of years!

The concept of barbecue sauce was born from these foundations. The title “saucier” was born as historic French, Italian, and Spanish chefs began to experiment with various sauce concepts. The earliest BBQ sauces contained a lot of butter, sage, pepper, and vinegar. These pioneers paved the sauces we love today. One thing we know, BBQ sauce makes delicious universal meals.

  • Alabama BBQ – What makes Alabama BBQ stand out is its sauce, while the state’s meat smoking technique is reminiscent of its Southern neighbors. Alabama BBQ always uses a white vinegar-based sauce. The mayo and vinegar combination may sound gross, but it’s actually good.
  • North Carolina Eastern-style BBQ and Lexington-style BBQ – The former uses the entire pig, while the latter only smokes the shoulder and ribs. Both styles are served with a ketchup-based sauce and use a spicy vinegar brush before grilling.
  • Kansas City – Slow and low is the name of the game when it comes to BBQ. Here, any type of meat is fair game. The super thick BBQ sauce combining tomato and molasses is a dead giveaway that you’re in Kansas City!
  • Memphis-style BBQ – Here they are known for dry rub BBQ with a heavy emphasis on pulled pork. The meat is cooked in a giant pit and served with a thin tomato-based BBQ sauce that packs a super tangy punch.
  • South Carolina Barbecue – You’ll find BBQ served with a mustard-based sauce that features brown sugar and vinegar as the main ingredients if you head south to South Carolina. Ham and pork butt are popular South Carolina BBQ staples.
  • Texas Barbecue – Texas is the home of Brisket BBQ. But make sure you distinguish between Central Texas and East Texas BBQ! Central Texans prefer their BBQ smoked over pecan and oak wood, while East Texans BBQ is smothered in hot sauce and commonly served as some form of a sandwich. No matter which style you choose, you’ll enjoy some delicious BBQ.
